1/2 cup quinoa 1 cup water 3 tablespoons good, unsalted butter 1/2 cup thin sliced French breakfast radishes 2 tablespoons basil chiffonade 1 teaspoon lemon zest 1 teaspoon lemon juice 1/4 teaspoon salt 1/2 teaspoon black pepper
Optional 1/4 cup crumbled goat cheese ( did not add it for the blog )
In pot simmer quinoa, water and butter until all water in absorbed. Fluff with a fork and cool in the fridge.
Toss the cooled quinoa with all other ingredients. Taste. Add additional salt and pepper if desired. Enjoy!
